Warm Up With Hearty Meatball and Vegetable Soup

We’re in the grip of winter’s chill here in Western New York, so hot soup is the menu item du jour. We’re eating it not only as a first course, but as the meal itself.

Here’s a recipe for Slow Cooker Meatball Vegetable Soup that fits the bill for a soup that’s an entrĂ©e. It’s easy to make and sticks to your ribs. Prep the ingredients the night before. Add them to the slow cooker in the morning and you’ll have piping hot soup when you get home. Pair the soup with some fresh, crusty bread and shaved Parmesan cheese and you’ve got a full meal.
