For me, a good steak has to have the right amount of sear on the outside and be a perfect medium rare on the inside. I can usually achieve that balance on the grill, but cooking the perfect steak inside was always more of a challenge.
It turns out, a cast-iron skillet was the solution. Our Cast-Iron Skillet Steak recipe calls for using a smoking hot cast-iron skillet on the stove top to get a deep brown sear before placing it in the oven to finish cooking.
