The Many Uses for Balsamic Vinegar and Balsamic Reduction

I shudder at the thought of a world without balsamic vinegar. Just like a fine wine, balsamic vinegar varies in flavor, so I suggest trying several to see which variety you like best.

In the Cutco Kitchen, we tried balsamic vinegar in the usual ways, in a salad dressing, as a finishing flavor on roasted veggies and as a marinade ingredient. But our biggest surprise was when we tried balsamic reduction on vanilla ice cream! Try it. You'll like it. Really!
