Use a Peeler to Make Healthy Vegetable Ribbons

Making noodles from vegetables seems to be all the rage these days. Fortunately you don't need an expensive gizmo to make vegetable noodles, all you need is your trusty Vegetable Peeler.

It's as simple as running the peeler along zucchini, yellow squash or carrots to make ribbons of vegetables and then cooking them to your preference. Our resident home cook, Barb, recently created two Vegetable Ribbon dishes, one that had her boil the vegetables and another where they were sautéed. Both were delicious. Give them a try.

This is a great recipe to involve kids in the kitchen. Have them make the vegetable ribbons with the vegetable peeler. Plus, they might just like their veggies if they've had a hand in making them.
