Healthy & Delicious Stuffed Zucchini Boats
This is the time of year when everyone is bringing to work all of the extra zucchini from their gardens, and there’s a lot of it. So, how could we let this time of year pass without a great zucchini recipe?
These Stuffed Zucchini Boats, one with meat and one vegetarian-style, won rave reviews in the Cutco Kitchen. They work well as a main dish, but could also be cut into pieces and served as a side dish.
These recipes can easily be customized to suite your tastes. Use beef instead of turkey, add in some diced bell peppers or even incorporate some rice.
