Spaghetti Squash Brings a New Twist on Lasagna
Fall is settling in here in western New York and I’m craving comfort food. Lasagna is one of my favorites, but pasta is often just too heavy. Enter spaghetti squash! The stringy noodle-like texture of its interior is the perfect healthy alternative for Italian dishes. Try this Spaghetti Squash Lasagna and you may never eat pasta again.
Don’t be intimidated by the hard exterior of spaghetti squash. Pop it in the microwave for a few minutes and then use a sharp knife to easily cut through the tough skin.
